“Amy Rains recipes” are celebrated at our house-every time I tell the family I am making one, they literally cheer! As a working mom of three, I appreciate how easy, healthy and delicious her meals are-particularly soups and skillets, but really all of them! Many of Amy’s recipes use items I stock in the pantry, but it is also easy to swap out ingredients if I am missing something.I have made several of her soups and chilis (and all are awesome) but the Jalapeño Popper Chicken Chili in this book combines the best of all-thick, a little spice, not too creamy and filling yet healthy. The Creamy Carrot Coconut Soup also combines all kinds of delicious flavors-a little sweet, a little savory, great texture.For a great side, the Warm Brussels Sprouts Salad makes brussels delicious for even those anti the veggie in the past.And for breakfast or dessert-Apple Chai Spiced Donut Holes-so yummy! I love how Amy makes gluten-free desserts taste amazing (there are many in this book, as well as on Wholesomelicious.com!).The Breakfast Nachos are on my list to make next-they look unique and combine eggs and Mexican, a perfect combo for us!Amy’s One Pot cookbook will quickly become covered in food splashes as it is already well-loved by my family. You can’t go wrong with any recipe in it!
