cant tell the difference between this gluten free and the regular Soy Sauce .. this is a good buythe flavor is really good! 10/10I wanted something that tasted exactly like the Kikkoman's I grew up with but without the added FLOUR/gluten. The original soy sauce was never made with flour. . . so why add it into the 20th century version? Adding flour unnecessarily only served to add unnecessary calories and a gluten content that was never intended to be there in the first place. This gluten-free version is just getting back to the original recipe, that's all - no loss of quality or flavor at all. I have to also compliment Amazon on the packaging when they sent these two glass bottles - - excellent job! Thanks much.While this soy-sauce-like product appeals to the glutten-free folks as it contains no wheat, just soy, I use Tamari primarily in making seitan - a meat substitute based on vital wheat gluten. Seitan isn't just for vegetarians or vegans, as it's very nutritious (grams of protein per ounce are close to red meat levels), affordable if you make your own, and stores in the fridge for extended periods. It's NOT a complete protein, however, so the amino acids found in Tamari (or regular soy sauce) boost its protein value a great deal (as does eating it with beans, or even cheese). But again, returning to the flavor - if I could buy this Tamari by the quart, I would probably give up Kikkoman's regular soy sauce in favor of it!I use it for recipes !
