It does really well as far as moisture for what you are making. It smells like strong cauliflower and is really dusty though. For the most part I love the product.Did care for it very strong taste. Good price just not or me.I use this flour to make gluten free savory crepes. The taste and consistency are excellent.Powder is completely white, really fine and virtually flavorless. I only took a star because the bag was leaking product. I couldn't find a hole or anything. Its possibly because the powder is so fine. This is a good thing, but they need better packaging.A good product if you don't have time to make your own which is quite labor intensive, but expensive for a simple product, that I thought with mass production the price could be lower, but I guess not. I will probably purchase againI made the pizza crust with the recipe provides with a few exceptions; added dehydrated garlic and onion. I baked it according to the instructions and the texture came out a little doughy, after baking it a little longer it was good.not impressed. Had hoped to use it to make breads. Didn't work well. Will use the rest in a different recipe and see how it does.This flour is NOT what you want to cook with. I don't care about what 'experts' are touting about cauliflower in foods. This is a cruciferous vegetable, and is NOT meant to be eaten in large quantities, like what you would if you substituted the flour in recipes for say, wheat flour. I had MAJOR gastrointestinal problems after baking this into a pizza crust. Not only does it turn a strange 'maple' color, smell a little strange, but the taste is VERY noticeable and the after effects.....well, let's just say that this was not one of my brightest ideas. The seller DOES NOT TAKE RETURNS, so BUYER BEWARE!! NOT worth the money I paid for it.
