Black sticky rice is another kind of sticky rice, dark in black color, where the black sticky rice can only be planted in Northern Thailand as it is a rare type due to the cold climate planting. The darker the color of the grains the richer in nutritions such as GABA, Omega 3, Gamma Oryzanol, Anthocyanin and Lutein which are essential for immune system and health benefits. To ensure the grains cook and absorb moisture evenly, black sticky rice first needs to be soaked and rinsed in water before cooking. Tips: In order to get more chewiness of this delicious healthy rice, try to mix it with white sticky rice in the ration of 1:1 as most Thai people do. Since the black sticky rice contains higher fiber, it needs to be soaked for at least 4 hours before mixing both varieties with the same ratio of water (1:1). Make sure to drain the water completely when rinsing it to have an accurate amount of water for cooking and mix them well before cooking so that the colors are consistent.
